wash: wash the scallions properly and let them on a towel to dry ,
Cutting: remove the roots and welted part of the scallions and chop them in a uniform shape to ensure equal removal of moisture (equal dehydration) of all chopped leaves. cut the white part of leaves in smaller size than green parts of leaves because they are more juicy than green leaves, it is optional to deal these rings separately, leaving the white portion will take more time to dry,
Drying: put the chopped scallion on a dehydrator tray or on baking sheet of oven
if using dehydrator, set your dehydrator on 125°F or 52°C for 6-8 hours and to treat scallions as vegetable, how to dry scallions in the oven keep the lowest temperature to preserve the nutritional content of chopped scallions at 170°F/75°C for 2-3 hours
cool and Dryness Check: Let the scallions to cool to normal temperature and check it with hand all scallion including white rings will be hard and easy breakable check carefully for inner portions of white ends for moisture. put the dried scallion in a jar for 4-6 days and check it regularly by shaking the jar and watch it sticking ,if the clump together repeat the processes of drying until completely dryness .
store the dried scallions in an airtight container for maximum an year, dried scallion has a longer shelf life compared to green scallion with same flavour and better convenience.
HOW TO REHYDRATE DRIED SCALLIONS OR DRIED GREEN ONIONS
Rehydrating dried scallions is a simple process to bring green onions natural texture and revives their natural flavor, take some warm water in a bowl and put the dried scallions into it and let them soak for 10-15 minutes, this will allow them to regain texture and will be rehydrated, after that drain the excessive water from bowl and your fresh green onions will be ready to use .
